Vegan chocolate cake can be really fucking good if you get the proportions right, even if the idea of vinegar and baking soda as a leavening agent is creepy. If only I had paid more attention to what those proportions were!

Vinegar and baking soda is a common leavening combination in all kinds of baking. Baking soda (sodium bicarbonate) is alkaline, so it reacts with acids to create carbon dioxide gas (bubbles = fluffy!). So adding any kind of acid to your mix along with baking soda will work--vinegar, orange juice, buttermilk, yogurt, etc. It's the exact same process that's achieved by using baking powder, which is just baking soda with an acid already mixed in (usually potassium bitartrate/cream of tartar, calcium acid phosphate, or sodium aluminum sulfate).
